The Grounds
Thistle Hill comprises 20 acres of verdant grounds populated by small copses of native trees, fruit trees, flowering shrubs, manicured hedgerows, grassed areas, grassy reeds, tall eucalyptus and a working vineyard. There are plenty of photo opportunities, especially around the dam where bird life congregate. Early morning walks at sunrise will see picturesque opportunities for budding photographers as the sun’s rays filter through the tall gums to the east.

Thistle Hill has lots of inviting areas to sit and relax with friends, picnic or have a late afternoon repast with wine and cheese. This is the table to lay out your supplies from The Hunter Valley Smelly Cheese Shop and wine from Wombat Crossing or one of the many other food and beverage providers in the area.

Thistle Hill has its very own vineyard and bottled wine. The vines start blooming in September/October and continue all through summer. Grapes are ready to pick from late January through early February on red or white – our grapes are white. Vines are clipped in March/April but we don’t consider there to be a season end. Stroll through the vineyard and capture a selfie among the vines.

The vineyard offers wonderful photo opportunities all year round – even in the winter months the denuded vines look interesting. Grab a picnic lunch and go exploring.

We have a large timber deck near the pool for outdoor dining and there’s a BBQ area for everyone to enjoy. Crockery, cutlery and glassware can be supplied to help with any private gatherings of the guests.
The pool is saltwater and available for the use of the guests from morning until 9pm at night. Fresh towels are always available and of course there are sunbeds to enjoy and large umbrellas to shade.

The Guest House is surrounded by manicured hedgerows and iceberg roses. The main entrance has commanding views over the property and is a great place to relax and read a book or soak in the peace and quiet.

Thistle Hill Guest House is nestled in among tall eucalypts – the Australian bush is all around. Kangaroos often traverse the property, especially in the evening.

There are many flowering trees and shrubs at Thistle Hill – offering up beautiful colours, textures and contrasts as the light changes through the day.

If you follow our Instagram page you will see many photo-essays showing the grounds of Thistle Hill at various times of the day and through all the seasons. Sunrises can be quite beautiful, especially looking through foliage as the sun’s rays appear.
But the grounds are just the start – there are many spectacular sights to see throughout Pokolbin and the Hunter Valley – and wonderful food and wine to taste. See our section on Local Attactions for several local recommendations.
