Thistle Hill Guesthouse is the perfect place to gather with friends, co-workers, family or team members. 


All our accommodation options are well equipped, with high quality linens, soft fluffy towels, and high end, well stocked amenities. The kitchens are ready to be cooked in, and you’ll have no shortage of dishes to serve up your delicious creations.

We want your group to feel at ease, regardless of which accommodation option you select. We also have fast Wifi even in our rural location thanks to Starlink.

Fully serviced, or hand over the keys? 

The choice is yours! For corporate functions, we recommend a tailored package to free up your time for workshopping and collaboration. For family events – why not just take the helm completely and just call us if you need anything.

We’re a small family business and we’ll bend over backwards to bring you the occasion you’re dreaming of with customised packages and flexibility second to none!

Boutique Hotel

Our eight bedroom boutique hotel comes with all the privacy and comforts of personal hotel rooms, fused with the gathering potential of a guesthouse

Each room is tastefully and uniquely decorated in beautiful French Provincial style. 

All rooms have their own ensuite bathroom and mini kitchenette with bar fridge and tea and coffee making facilities.  Each room is slightly unique, but all have seating areas, tvs and the ability to get some work done on your laptop with our satellite wifi.

Our luxurious eight-bedroom boutique hotel can also include exclusive use of some amazing spaces, including the ability to arrange vendors, food trucks and entertainment acts to set up events on the spacious lawns and deck areas.

Rustic privacy surronded by nature, not far from your friends, colleagues or family.

Lavender Cottage gives a great deal of privacy from the main hotel, so is well suited to accommodation for coaches, managers, or bridal parties who want to be on the same property as their gusts, but with their own surroundings.

Comprising of two bedrooms and a fold out lounge, there's also room for porta-cots or fold out children's bedding. We suggest a maximum of six adult guests stay at Lavender Cottage, to keep your stay comfortable.

Modern Luxury Villa

Sleeps 10-16 people

Modern and spacious, with plenty of entertainment potential, our Luxury Villa is great for groups keen to share a self contained space.

Our five bedroom modern luxury villa gives the most privacy to guests and is the best choice if you have young children, thanks to the fully fenced yard. The villa is pet friendly with dog door. Pets can stay safe and sound in the back yard with access inside, while you're out exploring the vineyards or off to an event.

Our Villa is a favourite for Brides and their group, often switching over to the Lavender Cottage after the wedding.

The Villa is also a fantastic option for corporate management while the rest of the team stays in the Boutique Hotel.

How many guests can you accommodate? 

If all three accommodations are at full capacity we can accommodate 48 people, however it is unlikely that the maximum configurations will suit your group’s needs.  Please see floor plans for each option.

Are you pet friendly?

Yes we are - cleaning fees apply and needs to be discussed/approved prior to your stay 


How many bathrooms are there? 

Lavender Cottage has 2 bathrooms.  

5 Bedroom Luxury Villa - 3.5 bathrooms.  

The Boutique Hotel Guesthouse has 9 bathrooms.

Do you supply porta cots & roll away beds for children?


We have 3 porta cots and

3 high chairs; one in each venue.

3 fold up beds (suitable for children)

Can we get a grocery delivery?

Just place your order with Coles online for your group’s delivery to our address 591 Hermitage Road, Pokolbin 2320. Special instructions for delivery are your accommodation choice: Lavender Cottage, the Luxury Villa, or Boutique Hotel Guesthouse. 

Do you have a BBQ?

We have 3 BBQ's onsite - 

1 at Lavender Cottage

1 at our Luxury five-bedroom Villa

1 near the pool for our eight-bedroom Boutique Hotel


Do you have a fire pit?

Yes, as part of hiring the 8-bedroom Boutique Hotel, you get exclusive use of our huge sandstone fire pit.  We also have a basket of rugs for those chillier nights, located in our events Pavilion.  Firewood is supplied along with fire starters and matches. 

Is there a pool? 

Yes Thistle Hill has 2 pools, one is available to use with the Boutique Hotel Suites and the second pool is part of the Luxury five bedroom Villa hire.

Can we invite extra guests over?

If you’re booking out exclusive use of our accommodation you may invite additional guests to events. This should be arranged with management to ensure enough parking and cleaning for the size of the event. Costs may apply, please enquire.

What wineries and restaurants are within walking distance?

McCaffrey's Estate is located just across the road.

To the right you can walk to Wombat Crossing, Adams Leap, Hunter Wine Lab and Red Door Collective.  To the left you’ll find Pigg’s Peake, Tintilla Estate, Peter Drayton and Ironbark Brewery. 

What are the noise restrictions?

11pm like most properties in the Hunter Valley for outside bands/music etc. However, we are located on 20 acres so in our events Pavilion providing you close the bifold doors you continue to party. Likewise in our Villa if you take it inside you can party on. 

Can we have a party?

Yes! You can even invite guests who are not staying onsite. We often host pre and post wedding events and special occasion such as family reunions, milestone birthdays.
